Spring Cleaning Breakfast – Carol McFarland

The days are getting longer and warmer and it sounds like the local chickens (at least those at Link’d Hearts Ranch) are starting to ramp up production again. I call this the “Spring Cleaning Breakfast” because eggs, mushrooms, cilantro, green onions and the vitamin C in strawberries are all supposed to support the body in its natural detoxifying processes.

This recipe is a pretty simple one – for each serving you will need:

1/2 c sliced mushrooms

1/4 c chopped asparagus

1/4 c cubed ham (optional – but you know I love the stuff from Omache Farm)

1/8 c green onions

1/8 c chopped cilantro (garnish after cooking)

3 yummy spring strawberries


Add butter or oil to the pan on medium-high heat. Whip up eggs in a separate bowl. Add veggies/ham to your pan and sautee until they are all just starting to become tender, now pour the eggs over it all and scramble it up until the eggs are at your desired level of done-ness. Top with cilantro and strawberries and start this lovely spring day off right!
